Black-eyed Susans
1 lb. cheddar cheese, grated
1 C butter, melted
1/8 t salt
3 C flour
1 (16 oz.) package whole, pitted dates
Coarsely chopped pecans
Mix cheese,
butter, salt and flour; blend well to form pastry dough. Chill. Stuff dates with
nuts. Preheat oven to 325 degrees. Roll out chilled dough on floured surface to
1/4 inch thick. Cut dough with biscuit cutter and wrap each stuffed date, then
roll in sugar. Bake on ungreased cookie sheets for about 25 minutes. (makes 4
dozen)
