Blueberry Streusel Muffins by Venila
1/3 C sugar
1/4 C butter
1 egg
2 C flour
1 t baking powder
1/2 t salt
1 C milk
1 t vanilla
1-1/2 C blueberries
Combine sugar and butter and cream until fluffy. Add beaten egg and beat well. Combine flour, baking powder and salt. Add to creamy mixture alternately with milk. Stir in vanilla and blueberries. Fill muffin tins 2/3 full (no more - maybe less!).
Topping:
1/2 C sugar
1/3 C flour
1/2 t cinnamon
Cut in 1/4 C
butter until crumbs form. Sprinkle over dough. Bake at 375 degrees 20-30
minutes.
