Bobbie Ellard's Zucchini Bread
3 eggs
1 C oil
2 t vanilla
2 C grated zucchini
2 C sugar
3 C flour
1 t baking soda
1/2 t baking powder
1/4 t salt
3 t cinnamon
1 C nuts
1 C raisins
Beat eggs until
foamy. Add oil, vanilla and zucchini. Stir well. Add dry ingredients, nuts and
raisins. Mix well and put in 2 greased loaf or baking pans. Bake at 325 degrees
until done, about 30 to 45 minutes. (Much better when frozen.)
