Brownie Cake Squares
2 C all purpose flour
2 C sugar
1 t baking soda
1/2 t salt
1 C shortening
1 C water
3 T cocoa
2 eggs, well beaten
1/2 C buttermilk
1 t vanilla extract
Chocolate frosting
Pecan halves, optional
Combine flour, sugar, soda and salt in large mixing bowl; stir well. Combine shortening, water and cocoa in heavy saucepan; bring to a boil, stirring constantly. Gradually stir into flour mixture. Stir in eggs, buttermilk and vanilla. Pour into greased and floured 15x10x1 inch jelly roll pan. Bake at 350 for 20-25 minutes or until a wooden pick inserted in center comes out clean. Spread with frosting while warm. Cool and cut into squares. Garnish with pecan halves, if desired. Yield about 2 1/2 dozen squares.
Chocolate Frosting:
1/4 C butter or margarine
1/4 C milk
1 C sugar
1/3 C semisweet chocolate morsels
Combine butter
and milk in heavy saucepan; bring to boil, stirring constantly. Stir in sugar,
return to boil. Cook 30 seconds, stirring constantly. Immediately remove from
heat. Add chocolate morsels; stir constantly until chocolate melts.
