Chicken Casserole (Frances Casey)

 

1 chicken, stewed and boned

1 C celery chopped fine

2 T onion chopped fine

1 C cooked rice

1 can chicken soup

3/4 C mayonnaise

1 can water chestnuts, drained and sliced

1/2 C slivered almonds

1/2 C oleo, melted

1 C bread crumbs or Ritz crackers

 

Cook celery and onion in 1/2 cup water or broth. Mix all ingredients. Place into ungreased casserole. Add melted oleo over top. Cook 30-45 minutes. Before done spread bread crumbs or Ritz crackers over top.
