Chicken Tetrazzini

 

1-1/2 to 2 C diced, cooked chicken

1-1/2 C noodles

1-1/2 C diced celery

1 T diced green pepper

1/2 C chopped onion

1 clover garlic, minced

1 T chopped parsley

3 C chicken broth

1/2 (10-1/2 oz.) can mushroom soup

1/4 C cooked tomatoes

Salt and pepper

1/4 C shredded sharp cheese

2 T bread crumbs

 

Cook noodles, diced celery, green pepper, chopped onion, minced garlic, and chopped parsley in chicken broth. Combine chicken, noodles, vegetable mixture, mushroom soup, drained tomatoes, salt and pepper. Add shredded cheese and bread crumbs. Bake at 300 degrees until lightly browned. Yield: 8 servings.
