Citrus Surprise Steak
1/4 C flour
1 t salt
1/4 t pepper
2 lbs. round steak, 1/2 inch thick
3 T shortening
1 C catsup or 1 can (10 3/4 oz.) condensed tomato soup, undiluted
1/2 C water
1 medium onion, sliced
1 medium orange, sliced
1 medium lemon, sliced
6 whole cloves
Combine flour,
salt and pepper. Cut round steak into 6 serving portions and coat with flour
mixture. Heat shortening (over medium heat) in skillet, add steak and cook until
browned. Stir in remaining seasoned flour. Combine catsup or tomato soup and
water and pour over meat. Arrange onion, orange and lemon slices in pattern over
meat and place whole cloves in onion slices. Cover and cook over low heat
(200-225 degrees) 1 hour or until meat is tender. Add more water if necessary.
Makes 6 servings. Note: Steak may be baked in moderate oven (350 degrees) 1
