Coconut Pie

 

10 T flour

1 1/2 C sugar

1 can coconut

4 egg yolks

1/2 stick butter

1 can evaporated milk

1 1/2 cans water

1/2 t vanilla

1/2 t salt

 

Combine flour, sugar, milk and water. Add eggs and butter. Cook on top of stove until thick (in thick bottomed pan to prevent sticking). Add coconut. Pour into baked pie shells. (Makes 2)

 

Variations:

Lemon Pie: 1/2 to 3/4 C lemon juice

Chocolate Pie: 4 T cocoa
