Colonial Peanut Oatmeal Cookies
1 C shortening
1 C Colonial granulated sugar
1 C Colonial light brown sugar
1 t vanilla
2 eggs
1-1/2 C all purpose flour
1 t baking soda
3 C rolled oats
1/2 lb. (1-1/4 C) salted Spanish peanuts
In large mixing
bowl, cream together shortening and sugar. Add vanilla and eggs; beat well. Sift
together flour and soda; add to mixture; mix well. Add rolled oats and peanuts;
mix well. Drop by teaspoonfuls onto greased cookie sheet. Bake at 375 degrees
for 10-12 minutes. (Makes about 7 dozen cookies)
