Currant Bran Muffins
1 C whole wheat flour
1 C oat bran
1 t ground cinnamon
1 t baking soda
1/4 t ground allspice
1/2 t salt
1/2 C currants or raisins
1/4 C vegetable oil
1 C low fat buttermilk
1/2 C mashed banana or sweetened applesauce
1/4 C brown sugar
1 egg
Preheat oven to 425
degrees. Mix together whole wheat flour, oat bran, salt, cinnamon, allspice,
baking soda and currants or raisins in a mixing bowl. In another bowl, mix
together oil, buttermilk, banana or applesauce, sugar, and egg. Blend into dry
ingredients, using a minimum of strokes. Fill lightly oiled muffin tins or
paper-lined tins three-fourths full. Bake for 15 minutes.
