Jam Cookies
2 sticks butter
2 egg yolks
2 C flour
1/2 C sugar
Egg whites
1 t vanilla
1 C chopped pecans
any flavor jam
Cream sugar and
butter with a spoon. Add egg yolks, vanilla and flour. Stir until well blended.
Make small balls and dip in egg whites, then in chopped pecans. Place on greased
cookie sheets. Bake in a 350 degree oven for 3-5 minutes. Remove from oven and
press finger in center of each cookie. Return to oven and continue baking for 20
min. more. While cookies ar still hot, place preserves in each indentation. Let
cool before serving. (Makes 3-4 dozen)
