Oatmeal Bran Muffins
1-1/2 C whole bran cereal
1-1/2 C buttermilk
1 egg, beaten
2 T reduced calorie margarine, melted
1/2 C whole wheat flour
3/4 C oatmeal
2 T sugar
2 t baking powder
1/2 t baking soda
1/4 t salt
Vegetable cooking spray
Combine cereal and
buttermilk; let stand 5 minutes. Stir in egg and margarine, mixing well. Combine
flour, oatmeal, sugar, baking powder, soda and salt in a large bowl; make a well
in the center of the mixture. Add bran mixture to dry ingredients, stirring just
until moistened. Coat muffin pans with cooking spray. Spoon batter into pans,
filling two-thirds full. Bake at 400 degrees for 20-25 minutes. Yield: 1 dozen.
