Pol's Apple Cake

3 eggs

1-1/4 C oil

2 C sugar

2-1/2 C self-rising flour

2 medium apples, peeled, cored, chopped

1 C shredded coconut

1 C chopped walnuts or pecans

Grease and flour tube cake pan. Preheat oven to 350. Blend eggs, oil and sugar until creamy. Add flour a little at a time. Blend well. Batter will be stiff. Fold in apples, coconut, and nuts. Pour into tube ban and bake for 1 hour. Remove from pan after about 30 minutes.
