Rhubarb Cake
1 C white sugar
1/4 C butter
1/4 C shortening
1 t vanilla
1 t soda
1 t salt
1 egg
3/4 C sour milk
1-3/4 C flour
2 C rhubarb
1/2 C brown sugar
1/2 C nuts, chopped
Cream white sugar,
butter and shortening; add vanilla, soda and salt. Add egg and beat well. Add
milk, flour and rhubarb. Mix well and pour into 10x15" pan. Sprinkle brown sugar
and nuts on top. Bake at 375 degrees for 45 minutes. Serve with whipped topping,
if desired. Yield 12 servings.
