Sandwich Filling
1 C celery, chopped fine
2 carrots, grated fine
2 cucumbers, seeds removed, chopped fine
1 small onion, grated
1/2 green pepper, chopped fine
1/4 C water
1 envelope Knox gelatin
1 C mayonnaise
1 T lemon juice
1 t salt
Mix first 5
ingredients together. Add 1 t salt. Let set 1 hour. Drain well! Mix one envelope
unflavored gelatin with 1/4 C water. Let stand until softened, then heat to
dissolve gelatin. Add 1 C mayonnaise, 1 T lemon juice; then add drained
vegetables. Fold in until well mixed. Chill and spread on thin slices of
buttered sandwich bread. Cover with slice of buttered bread (butter keeps bread
from getting soggy).
