Zucchini Beef Lasagna (Dwynette's)
1/2 lb. ground beef
1/3 C chopped onion
1 15 oz. can tomato sauce
1/2 t whole oregano
1/4 t whole basil
1/4 t pepper
1 C low fat cottage cheese
1 egg
4 med. zucchini, sliced
1 C shredded mozzarella cheese (or more)
1 lb. lasagna noodles
Cook lasagna
noodles, cool in cold water and set aside. Cook ground beef and onion; add
tomato sauce, oregano, basil and pepper. In separate bowl, mix egg with cottage
cheese. Spray oblong baking dish with non-stick cooking spray. Place small
amount of tomato sauce mixture in bottom of pan and spread. Layer noodles,
tomato sauce, zucchini, cottage cheese and mozzarella cheese. Repeat. Bake at
350 for one hour or until bubbly.
